Pie Photos [Dec. 3rd, 2009|11:45 am]
Douglas Spencer
Yes, the ploughmans pie worked, and here are photos.

That's a half-litre bottle of beer, for scale. Click for a larger one (larger photo, I mean, not larger pie/beer).

When I make the next one, I'll cut the ham and apples into smaller bits, and I'll distribute small bits of cheese throughout the filling to help it all hold together when it's cut. I think I'll also make it wider and not so tall. And I'll remember to glaze the pastry before it goes into the oven.

Holding together is a good plan (although it's getting a bit hawaiin pizzay) but tall is good and different!

I think if I was going to do this I'd put the ham into a cheese sauce, the apple sliced as a layer at the bottom, and then a layer of pickle under the crust at the top.

Not that I would do this because it's bonkers.

Actually, now you mention it, I do have a 2.5Kg jar of Branston in the cupboard...

I wouldn't do the cheese sauce, I like my cheese in bits in a pie. But I like the layers idea.

Of course, not going to happen, even for Hogswatch, as is clearly bonkers. But they said that about Toffee Apple Maple Bacon cheesecake, too.

I wouldn't like to encourage you to do it for Hogswatch, what with it being a Special Serious Celebration for Serious Special People, none of whom are bonkers at all. Oh no.

That's great! But I think a traditional gelatine might help hold it together.

or even some liquid (broth? cider/juice?) plus thickener.

Hi sweetie - howabout cooking the apples to mush first and mixing the other ingredients into the applesauce? Did you take any photos of the mark 2? It went down very well at the party...
