3. If they can do saag aloo, and they can do saag paneer, why can't they do aloo paneer?

What puzzles me is that our local takeaway, which is generally very good, does a dish called sag paneer which is in fact made with cheese! i.e. melted cheddar in the spinach, not panir! I did ask them if they could do actual panir and they said no, they haven't got any. How weird is that?

Yes, but a totally different kind of cheese to cheddar - it is white and it doesn't melt down into stringy its and oil.

Indeed - I'm guessing surminal hasn't eaten panir/paneer :) It's made from milk and lemon juice, so is always vegetarian (no rennet, and hence suitable for Hindus also). It is thermosetting rather than thermoplastic: you cut it into chunks and fry them. They go pleasantly crispy on the outside. Using western-style cheese instead has a totally different effect and is a very peculiar thing to do, when you are a Pakistani-run restaurant and ought to know better! Especially since they actually call it sag paneer, not sag cheese!
